Waterford Estate

The story

In the Blaauwklippen Valley, beneath the Helderberg Mountain, Waterford Estate has spent decades on a single conviction: that great wine begins in the vineyard, not the marketing department. The estate farms regeneratively (cover crops instead of bare soil, livestock to aerate the ground, ladybugs over pesticide) and refines everything by hand in a cellar built around a working courtyard, so the process is never hidden from the people who visit.

Their flagship release, The Jem, is the estate’s own description of what patience and terroir can produce when neither is rushed. Master of Wine Tim Atkin has called their Cabernet Sauvignon “often among my favourite Stellenbosch Cabernet Sauvignons”, a credential Waterford earned independently, long before any hotel asked to pour it.
